By working with local farmers and producers, we support the local economy and reduce the environmental impact of transportation. This also allows our chefs to take advantage of fresh, seasonal ingredients from Scotland's bountiful natural larder.

We work hard to ensure sustainability is at the heart of everything we do, which is very evident in our menus. Eddie's Seafood Market

After building up his business over 30 years, Eddie has now retired but his legacy goes on. Eddie's Seafood Market supplies The Witchery with our popular 'Eddie's cure' smoked salmon and our delicious Cumbrae oysters.


Phantassie Farm 

Phantassie Organic Market Garden is based on the edge of East Linton in rural East Lothian, just 25 miles from Edinburgh. The growing area is a sheltered patch which has been in use for over 150 years. Supplying u with wonderful organic produce, including a wacky selection of pumpkins for our world-famous pumpkin display each Autumn.

Through years working in some of the most prestigious hotels and Michelin starred restaurants around the world, Sebastian brings a refreshing attitude to blending exotic ingredients with more locally sourced Scottish produce. Based in Linlithgow just a few miles East of Edinburgh, creating luxurious chocolate treats for our guests to enjoy.


Kames Fish Farm

Kames is Scotland’s oldest family fish farm, established in 1972 when Stuart Cannon, a farmer’s son from Lincolnshire, in search of ‘his own adventure’, first pioneered putting fish into freshwater lochs & seawater sites on the Inner Hebridean West Coast. His understanding influenced the entire aquaculture industry, & that forward-thinking husbandry & innovation has continued at Kames to this day.
